I think gluten free is
cachting on and becoming more available but my worry is the nutrition in some of the gf products on the shelves already. Many are packed with sugars and empty carbs. With this in mind I worked in my kitchen for over a year and came up with 3 different all purpose gf blends that can be used cup per cup in any recipe. I do offer one, the white all purpose gf blend, that is a white flour replacer but the other two are lower in starches and higher in protein and fiber. My daughter is a type 1 diabetic so it was important to us to have more protein and less starch. These blends are awesome and make gf cooking/baking simple.
